Chocolate Zucchini 'n' Tahini Blender Muffins

She wore an itsy bitsy teenie weenie yellow polkadot bikini and ate a dreamy chocolate zucchini tahini…blender muffin. You can have your muffin and eat it too, with 2 1/2 cups of zucchini hiding in the batter. Be prepared, because the addition of tahini does make them oh-so dreamy. And don’t drain the zucchini! It’s what makes these dense and M-O-I-S-T (can’t say it, gotta spell it)! With no bowl, just a blender, you’ll have these whirled out in no time flat, so you can eat them, stat.

  • 2 cups large flake oatmeal
  • 1 teaspoon baking soda 
  • 1/2 tsp baking powder
  • 1 teaspoon ground cinnamon 
  • 1/2 teaspoon ground cloves 
  • 1/2 teaspoon fine sea salt 
  • 1/2 cup unsweetened cacao powder 
  • 1/2 cup tahini
  • 1/2 cup yogourt (sheep or goat)
  • 2 large eggs
  • 1/4 cup avocado oil
  • 1/2 cup pure maple syrup 
  • 2 1/2 cups grated zucchini, loosely packed
  • 1/2 cup mini chocolate chips (recommended brands: Camino or Enjoy Life)


Preheat over to 350 degrees Fahrenheit and prepare 18 muffin cups with either paper inserts or by greasing tins.

In high speed blender,* place oatmeal, baking soda, baking powder, cinnamon, cloves, salt and cacao powder, and process on high speed until oatmeal resembles a fine flour-like texture.

Add tahini, yogourt, eggs, oil and maple syrup and process, pausing to scrape down sides. Blend for about 3 minutes, until well combined.

Allow batter to cool about 5 minutes (to avoid chocolate chips melting), and stir zucchini and chocolate chips into batter by hand.

Fill prepared muffin cups no more than 3/4 full. Sprinkle with additional chocolate chips, if desired.

Bake for 25 minutes, or until toothpick comes out clean when inserted in middle. Store in refrigerator.

*Don’t have a high-speed blender? No problem! Simply blend oatmeal into fine powder using a food processor or your mediocre blender (hey, it’ll still blend something, but maybe not muffin batter in its entirety). Stir remaining dry ingredients into oatmeal flour to combine, then add all wet ingredients and mix really well to combine. Fold in zucchini and chocolate chips and continue to prepare and bake as directed.
