Butternut Squash My Potato Gratin

Your potatoes are about to get squashed, but in the best way possible in this spin on the traditional au gratin. Joyce, the blogger from the Joyce of Cooking, shares this delicious recipe that can be made extra simple with the use of a mandoline. With extra nutrients and flavour, you'll probably want to squash your potatoes on the regular after trying this one!


  • 1 butternut squash with ends cut off, peeled, and seeds scooped out, sliced thinly
  • 1 medium size white potatoes, wash, peeled and sliced thinly
  • 1/2 cup milk
  • 1 cup panko bread crumbs
  • 1 teaspoon paprika
  • 1 cup mozzarella cheese
  • salt and pepper
